Apple cider vinegar has additional health benefits; white vinegar is cheaper.

Slice 300g cucumber and sprinkle with 1 tsp salt.

Let the cucumbers sit for at least 10 minutes.

After 10 minutes, squeeze out the juice from the cucumbers.

In a bowl, combine 1 tbsp soy sauce, 1/2 tbsp rice vinegar, 1/2 tsp white sugar, 1/2 tsp sesame oil, and a pinch of salt. Mix well.

Add 1 tsp ginger to the sauce mixture and stir.

Pour the sauce mixture over the cucumbers.

Add 1 tbsp white sesame seeds and mix well.

Cook the mixture on low heat for 3-5 minutes.

Serve and enjoy.
