Preheat the oven to 450°F.

Roast the beef bones in the oven for at least 1 hour, preferably 90 minutes.

Transfer the roasted bones to a slow cooker.

Scrape the bits and pieces from the bottom of the roast pan and add them to the slow cooker.

Rinse the roast pan with hot water and add that water to the slow cooker to capture more flavor.

Add about 1 gallon of hot water to the slow cooker to cover the bones completely.

Turn the slow cooker to 350°F.

Coarsely chop 3 or 4 onions and add them to the slow cooker.

Smash and add 5 cloves of garlic to the slow cooker.
