1 tbsp Almonds (Or Walnuts, Pistachios, etc)
Italian Bread cut into 1 inch slices
Thinly sliced Mozzarella
Ripe Tomatoes cut into rounds
Arugula
Salt to taste

Combine Basil, Olive Oil, Parmesan, Garlic, Almonds, and a pinch of Salt in a Blender to create Pesto. Whiz until pureed.

Brush Olive Oil lightly on one side of each slice of bread.

Spread Pesto on the opposite side of both slices.

Layer Sliced Mozzarella on one side of bread, covering the entire surface.

Top with Tomatoes, and season with a sprinkling of salt.

Lastly, add Arugula, and top with the other slice of bread.

Place in a hot Indoor Grill/Panini Press/Pan and cook for 3-4 minutes, or until bread is golden and toasted, and cheese has melted.
