Heat a grill pan over medium heat.

Drizzle olive oil on one side of each slice of bread.

Place one slice of bread, oiled side down, on the pan.

Layer mozzarella cheese on the bread in the pan.

Add a layer of sliced tomatoes on top of the cheese.

Sprinkle with salt and black pepper to taste.

Add fresh basil leaves over the tomatoes.

Top with grated parmesan cheese.

Cover with the second slice of bread, oiled side up.

Grill until the bottom is golden brown, about 3-4 minutes.

Carefully flip the sandwich using a spatula.

Grill the other side until golden and the cheese is melted, about another 3-4 minutes.

Remove from the pan and let it cool for a minute before slicing.

Serve warm, optionally with a side of marinara sauce.
