1

Peel and boil 6-7 medium-sized potatoes with a little salt until fork-tender.

2

Grate the boiled potatoes until finely shredded.

3

In a pan, heat 2 tablespoons of oil over low heat.

4

Add 1 finely chopped small onion and sauté until soft, without browning.

5

Add 3-4 finely chopped green chilies and sauté for a short time.

6

Add the following spices: 1 teaspoon red chili powder, 1 teaspoon chaat masala, 1 teaspoon mango powder, 1/2 teaspoon salt, 1/2 teaspoon turmeric, 1 teaspoon coriander powder, and 1 teaspoon roasted cumin powder. Mix well and sauté for a few minutes to eliminate rawness.

7

Add the grated potatoes to the pan and mix thoroughly with the spices over low heat.

8

Add 1/2 tablespoon lemon juice and mix well, then transfer the mixture to a bowl to cool.

9

Once cooled, add 3 tablespoons of bread crumbs and chopped fresh coriander leaves to the potato mixture and mix well.

10

Shape the mixture into patties according to the size of the bread rolls being used.

11

Prepare a sauce by mixing 1/2 cup mayonnaise, 1 tablespoon chili garlic sauce, and 1 teaspoon paprika powder in a bowl.

12

Blend together 1 cup yogurt, a handful of fresh coriander, a handful of fresh mint leaves, 1 large green chili, 2 cloves of garlic, and a little salt to make a green chutney.

13

In a separate bowl, beat 1 egg until fluffy for coating the patties.

14

Heat oil in a pan for frying the patties.

15

Dip each patty in the beaten egg and fry in the pan until golden brown on both sides over medium-low heat.

16

Once fried, remove the patties and place them on a plate.

17

Heat a tava (griddle) for toasting the bread rolls, adding 2 tablespoons of oil to crisp them up.

18

Toast the bread rolls on the tava until golden brown on both sides.
