Chop 500 grams of chicken drumstick into small pieces.

Marinate the chicken with 2 tbsp of light soy sauce, 2 tbsp of oyster sauce, 2 tbsp of rice wine, a few dashes of white pepper, and 0.5 tsp of sugar. Mix well and refrigerate for approximately an hour.

Turn on the heat to medium low and add a good amount of oil to the pan.

Add the chopped stems of 3 stalks of spring onion and 1 sliced red onion to the pan.
