Start with pork loin chops, bone-in, purchased for $3.99 a pound, totaling $9.78 for four chops.
Make a marinade using apple cider vinegar and avocado oil, approximately half and half, eyeballing the amounts.
Add kosher salt to the marinade.
Sprinkle Johnny's seasoned pepper into the marinade, which contains sugar, red and green bell pepper, garlic, and onion.
Flip the pork chops over and season the other side with the marinade.
Let the pork chops marinate on the counter for a couple of hours, flipping them occasionally and massaging the marinade into the meat.
If marinating for a shorter time, it's fine to do so at room temperature as the pores in the meat open up better.
If marinating longer, place the pork chops in the fridge; the creator marinated them for about 6 hours this time.
Preheat the Weber Q1200 grill to over 400°F, ensuring it's good and hot before cooking.
Place the pork chops on the grill set to high heat.
Cook the pork chops for about 7 minutes before flipping them over.
After flipping, cook for an additional 4 minutes on the other side.
Check the internal temperature of the pork chops; they should reach a minimum of 145°F.
Remove the pork chops from the grill when they reach about 163°F and 167°F, respectively.
Cut into one pork chop to check for juiciness and flavor.
