pork chops (3/4 pound each)

Start by brining the pork chops for an hour to an hour and a half.

In a small pot, heat 2 cups of water.

Add 1/4 cup of kosher salt, 2 teaspoons of brown sugar, and 12 black peppercorns to the water.

Whisk until the salt and sugar dissolve, then remove from heat.

Add 2 1/2 cups of ice to cool the brine quickly.

Place the pork chops in a container and pour the brine over them to cover.

Seal the container and refrigerate for 1 to 2 hours, or overnight if possible.
