Start by brining the pork chops for an hour to an hour and a half.
In a small pot, heat 2 cups of water.
Add 1/4 cup of kosher salt, 2 teaspoons of brown sugar, and 12 black peppercorns to the water.
Whisk until the salt and sugar dissolve, then remove from heat.
Add 2 1/2 cups of ice to cool the brine quickly.
Place the pork chops in a container and pour the brine over them to cover.
Seal the container and refrigerate for 1 to 2 hours, or overnight if possible.
In the meantime, prepare the glaze by melting 1/2 stick of butter in a pot.
Add 1/3 cup of brown sugar and 3 tablespoons of Cointreau to the melted butter and mix well.
Stir in 5 oz of crushed pineapple and 1 tablespoon of garlic paste.
Add 1 tablespoon of Chipotle chili powder, 2 tablespoons of rice vinegar, 1 tablespoon of kosher salt, 1 tablespoon of ground black pepper, and 1 tablespoon of granulated garlic to the mixture.
Bring the glaze to a boil, then reduce heat and simmer for 4 to 5 minutes until it thickens.
Remove the pork chops from the brine and dry them off.
Drizzle oil on the pork chops and season with kosher salt and black pepper on both sides.
Preheat the grill and oil the grates.
Place the pork chops on the grill, turning them frequently.
Do not baste with glaze until each side is nicely charred to prevent burning.
Cook for about 4 to 5 minutes on one side before flipping.
After flipping, brush the glaze on the pork chops and continue cooking until they reach an internal temperature of 141°F to 142°F.
Let the pork chops rest covered with foil for 10 minutes before serving.
