Purchase two fresh brown crabs from a fisherman.

Dispatch the first crab humanely by inserting a screwdriver into the hole in the apron and wiggling it to kill it quickly.

Place the dispatched crab into a pot of boiling water and simmer for 10-15 minutes depending on its weight (10-15 minutes for 1 kg).

Turn the first crab over and pull off the legs and claws, placing them on a plate.

Remove the crab's 'purse' by pushing it off from behind.

Scrape out the brown meat and place it to one side of the shell, smoothing it out as you go.
