Peel and soak the potatoes in cold water.
Use a cheese grater to grate the potatoes into a bowl.
Soak the grated potatoes in cold water for a few minutes to remove excess starch.
Transfer the soaked potatoes to a cheesecloth or kitchen towel to strain and remove excess water.
Heat a cast iron skillet with some olive oil over medium heat.
Transfer the dry grated potatoes to a bowl.
Add salt, chili powder, turmeric, and black pepper to the potatoes; mix well to coat evenly.
Add one beaten egg and one teaspoon of cornstarch to the potato mixture; mix until well combined.
Shape the potato mixture into small, flat rounds and place them in the heated skillet.
Cook the hash browns until crispy, then flip them to cook the other side.
In another cast iron skillet, cook the eggs with a little salt and chili powder to taste.
Once the eggs are cooked, remove them from the skillet.
Serve the hash browns with the cooked eggs and toast on the side.
