1 Box Rotini or Bowtie Pasta
1 - 1 ½ cups Homemade Italian Dressing
½ cup Parmesan Cheese
1 cup Mozzarella Pearls - Halved
¾ cup Pepperoni
¾ cup Salami
½ cup Pepperoncini
¼ cup Pitted Kalamata Olives
½ cup Tomatoes
1 English Cucumber Diced & Cored
¼ cup diced curly Parsley
Fresh Basil
Kosher Salt
Black Pepper
½ cup Red Wine Vinegar
1 cup Extra Virgin Olive Oil
1 ½ tsp Lemon Juice
1 ½ tsp Dijon Mustard
1 tbsp Honey
1 ½ tbsp Minced Red Onion
½ Clove Grated Garlic
¼ tsp Greek Orégano
¼ tsp Dried Parsley

Boil pasta until al dente. Note that cook times may vary depending on the brand of pasta that you're using. Once pasta is cooked, drain and rinse with cold water. Set aside.

In a large mixing bowl, make Homemade Italian Dressing. Full recipe can be found here. You can also use your favorite ready-made Italian dressing.

Dice all of the fresh veggies and toppings - onions, tomatoes, cucumbers, olives, pepperoncini, salami, pepperoni, and fresh parsley.

Add all of the diced veggies and mozzarella cheese into a large mixing bowl with the cooked pasta. Mix until well combined. Add parmesan cheese and mix again. Then add the Italian Dressing and mix until well combined. Taste the pasta salad and adjust flavors if needed. This is a great time to add any extra salt, pepper, fresh lemon juice, red wine vinegar, or Italian dressing.

Once the salad is done, cover and refrigerate for at least 4 hours before serving. In the end, garnish with fresh basil.
