2-3 lbs Beef Stew Meat
1/3 Cup Cassava Flour
1 Large Onion, diced
1 Large clove garlic, minced
1 1/2 Cups Mushrooms, sliced
3/4 Cup Celery, diced
2 Cups White Sweet Potato, cut into bite size pieces
2 Cups Carrots, cut into bite size pieces
1 tsp Salt
1/2 tsp Herbamere
2 tsp Dried Rosemary
2 Bay Leaves
5 Cups of Stock (1 Cup reserved)

Mix Cassava Flour and Beef together.

On Saute function, brown Meat in batches then remove and set aside.

Add Onion and Garlic with 1 Cup of reserved Stock - Saute for 2-3 minutes until soft while scraping up all of the meat bits off the bottom of the pan.

Add Mushrooms, Celery and Saute for 3-4 minutes.

Add Sweet Potato, Carrots, Browned Meat, Seasonings and Remaining Stock.

Mix well.

Place lid on Instant Pot and set to High Pressure for 40 minutes.

You can manually release pressure once done or leave it to release naturally.

Taste, season as desired, serve and enjoy.
