Homemade broth is healthier and more flavorful.
Start by placing artichokes into a pan.
Pour in a couple of tablespoons of the oil from the artichokes.
Add vinegar and mustard to the artichokes and shake to make a dressing.
Trim and wash leeks, then chop them and add to the pan with the artichokes.
Season with salt and pepper, and cook on medium heat for 15 minutes.
Add broad beans and frozen peas to the pan.
Roughly chop mint and stir it into the mixture.
Add 1 liter of boiled water to the pan.
Optionally, add a chicken stock cube for extra flavor.
Blend a couple of ladles of the soup and pour it back into the pot.
Toast four slices of good bread under the grill.
Prepare ricotta by mixing it with salt, lemon zest, and 20 grams of parmesan cheese.
Spread the whipped ricotta on the toasted bread and garnish with extra lemon zest, parmesan, mint leaves, and flaked dried chilies.
