2 fresh garlic bulbs or 1/2 cup garlic cloves
2 tablespoons kashmiri red chili powder
2 tablespoons oil

Roughly grind 1 tablespoon coriander seeds. Transfer the ground coriander seeds into another bowl.

Smoothly grind 2 fresh garlic bulbs or 1/2 cup garlic cloves, 2 tablespoons kashmiri red chili powder, and 1/2 cup water.

In a pan, heat up 2 tablespoons of oil. Add ground coriander cumin. Saute for 1 minute.

Add 1/4 cup jaggery and let it melt completely.

Add ground garlic chili paste to the pot. Use 1/4 cup water to remove the paste from the sides of the container and add it to the pot. Then use another 1/4 cup water to remove more paste from the sides of the container and add that to the pot as well.

Add salt to taste to the mixture. Stir well and be sure to stir frequently.

Use medium to low heat to cook the chutney for 15-20 minutes. When the chutney no longer sticks to the side of the pan and the oil is oozing from the chutney, it will be ready.
