Prep the chicken breasts by cutting them into bite-sized chunks, being careful not to cut them too small to avoid drying out.
Season the chicken pieces with salt and pepper, then add 2 teaspoons of corn flour and mix well to coat the chicken.
Peel and cut the onions into thick slices.
Heat about a tablespoon of olive oil in a large pan over medium heat.
Add the onions to the pan and cook for about 6 minutes until they start to soften, stirring regularly to avoid burning.
Add the crushed or grated garlic to the onions and cook for another minute, stirring continuously to prevent burning.
Add the curry powder, ground turmeric, ground ginger, a pinch of sugar, and soy sauce to the onion and garlic mixture, stirring well to combine.
Pour in the chicken stock and bring the mixture to a gentle simmer, stirring occasionally, and let it simmer for about 20 minutes.
After 20 minutes, remove the pan from heat and let it sit for 15 minutes to concentrate the flavors.
Blend the sauce until smooth using a blender or stick blender (optional).
Wipe out the pan and add more olive oil, then add the seasoned chicken pieces to the pan.
Cook the chicken for about 3 minutes until it gets some color, but do not cook it fully as it will finish cooking in the sauce.
Add the blended sauce back to the pan with the chicken and simmer for 5 minutes to finish cooking the chicken.
Optionally, add a handful or two of peas to the curry and simmer for another 5 minutes.
Serve the chicken curry with rice.
