5 pounds beef short ribs, bone-in, thinly sliced into ½-inch thick strips
1 ¼ cups white vinegar
½ cup granulated sugar
½ cup kosher salt
2 jalapeños, stemmed and thinly sliced into rounds
1 medium yellow onion, thinly sliced
1 ¼ cups rice wine vinegar
¾ cup granulated sugar
2 teaspoons kosher salt
1 medium daikon, peeled and julienned

Mix all marinade ingredients (soy sauce, light brown sugar, mirin, pear juice, orange juice, onion juice, garlic juice, ginger juice) in a large bowl with 1 ¼ cups water until sugar dissolves.

Add the short ribs to the marinade, cover, and refrigerate for at least 6 hours.

For the pickled onions and jalapeños, combine soy sauce, sugar, salt, and ¾ cup water in a saucepan over medium heat until dissolved, then pour over onions and jalapeños.

For the pickled daikon, mix rice wine vinegar, sugar, salt, and ¼ cup water in a saucepan over medium heat until dissolved, then pour over the daikon.

Heat a large cast-iron skillet over medium-high heat. Cook the marinated short ribs in batches, flipping once, until charred and cooked through, about 2 to 3 minutes.

Cut the cooked ribs into 1-inch pieces and serve immediately with pickles, kimchi, rice, lettuce, and sesame leaves.
