Add 2 cups of washed black beans to the pressure cooker.
Add 5 cups of water, 2 bay leaves, 1/2 white onion, 1/2 yellow bell pepper, and 4 cloves of garlic to the pressure cooker.
Seal the pressure cooker and cook for about 20 minutes until the beans are soft.
Separate the bean broth from the beans.
In a separate pan over medium-low heat, add 1 tablespoon of lard.
Once heated, add 1 cup of chopped bacon and cook until crispy.
Remove the bacon and reserve it for later.
In the same fat, add 1/2 white onion and 1/2 yellow bell pepper.
Add 1 tablespoon of garlic paste, 1/2 tablespoon of cumin, and black pepper to taste; sauté for 2-3 minutes.
Combine the sofrito with the beans in the pressure cooker.
Add 2 cups of washed white rice and 2.5 cups of bean broth to the mixture.
Add 1 tablespoon of salt and 2 teaspoons of vinegar; mix well.
Seal the pressure cooker and set it to the rice program or cook for 15 minutes.
After 15 minutes, the rice is ready; serve with the reserved bacon on top.
