Heat oil in a skillet or wok and fry the marinated meats until browned.

Once browned, add sliced smoked pork chorizo and shrimp, and continue frying for 1 more minute. Set aside the mixture.

In the same skillet, add more oil and sauté the diced onion and julienned carrots on high heat for about 2 minutes.

Pour in 1 cup of chicken broth, 1 tablespoon of oyster sauce, and 1 tablespoon of soy sauce. Mix to combine all ingredients.

In a glass of water, mix 1 tablespoon of cornstarch and add it to the stir-fry to thicken the sauce. Stir until well combined.
