Chinese Fried Rice

2 cups basmati rice
10 cups water
2 eggs
pinch of salt
cracked pepper
2 tbsp peanut oil
2 ham steaks
1 handful shallots
1 cup mixed vegetables (peas, corn, carrots)
3 tbsp soy sauce
half handful barbecue Chinese pork

Wash 2 cups of basmati rice quickly.

Bring a pot with 10 cups of water to a boil.

Crack 2 eggs into a small bowl, add a pinch of salt and cracked pepper, and mix with a fork until pale.

In a wok on medium heat, add 2 tbsp of peanut oil and coat the sides.

Pour in the egg mixture and move it around to create a thin omelet, then roll it up and remove from heat.

Once the water is boiling, add 2 cups of rice and cook on high heat for 10-12 minutes until soft but tender.

After 12 minutes, taste the rice to check for doneness, then strain and run cold water over it to stop the cooking process.

Slice 2 ham steaks into small cubes.

Thinly slice a handful of shallots.

In the wok on medium to high heat, add 3 tbsp of peanut oil and the cubed ham, mixing quickly.

Add the mixed vegetables to the wok and stir.

Add the cooked rice to the wok, mixing it through.

Pour in 3 tbsp of soy sauce and keep mixing everything around on high heat.

Add the sliced shallots and the chopped omelet to the wok, mixing well.

Optionally, add half a handful of barbecue Chinese pork and lower the heat.

Mix until all the liquid is absorbed and serve.
