Prepare the beef the day before cooking by making a dry rub with 2 tablespoons of plain flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of basil, 1 teaspoon of oregano, 1 teaspoon of rosemary, 1 teaspoon of thyme, 1 teaspoon of cinnamon, 1 teaspoon of paprika, and 1 teaspoon of chili in a bowl.

Score the beef diagonally on both sides to create a crisscross pattern.

Generously cover the beef with the dry rub, ensuring every side is coated.

Wrap the beef in cling film and refrigerate overnight for best flavor absorption, or at least for 4 hours if in a hurry.

Remove the beef from the fridge and allow it to come to room temperature before cooking.

Prepare the roasting dish by peeling and slicing a red onion and slicing garlic cloves in half, placing them in the dish with a drizzle of olive oil and seasoning with salt and pepper.
