Put warm milk, yeast, and sugar in a bowl and stir.
Cover the bowl and let it sit in a warm place for 5 to 6 minutes to proof the yeast.
Add the rest of the sugar, vanilla essence, and 1 egg to the bowl and stir.
Add salt and sift in just a quarter teaspoon of salt into the flour.
Knead the dough for about 5 minutes, or use a mixer if available.
Incorporate butter into the dough until well mixed.
Scrape the dough from the sides of the bowl and mix it in with the rest of the dough.
Cover the bowl and let it rise in a warm place for about 90 minutes or until it doubles in size.
Cut the dough into 8 to 16 pieces, depending on your preference.
Roll the pieces into round shapes and place them on a baking pan lined with nonstick paper.
Cover the rolls and let them rest in a warm place for 20 to 25 minutes to rise.
Make indents in the center of each roll using the bottom of a glass.
In a container, combine cottage cheese, sugar, 1 egg, and vanilla essence for the filling and mix until smooth.
Fill the indented rolls with about 1 to 2 tablespoons of the cottage cheese filling, being careful not to overfill.
Brush the outer part of the rolls with egg, avoiding the center.
Add fruit like cherries or berries in the center of each roll.
For the streusel, mix flour, sugar, and softened butter by hand to create crumbs.
Sprinkle the streusel on the outer part of the pastry, allowing some to fall in the center if desired.
Bake the pastries at 170°C for 30 to 35 minutes or until golden brown.
