3 c. rolled oats
½ c. unsweetened coconut
1 c. almonds
1 c. pecans
2 Tbsp. dark brown sugar
½ tsp. salt
2 tsp. cinnamon
⅓ c. coconut oil
½ c. honey
1 tsp. vanilla
½ c. dried fruit (dark and light raisins, dried cherries, dried cranberries)

Preheat oven to 300°F.

In a large bowl, combine oats, coconut, and nuts.

In a smaller bowl, combine sugar, salt, cinnamon, coconut oil, honey, and vanilla.

Pour the wet ingredients over the dry and mix well.

Spread on a cookie sheet, keeping it close together for chunky granola.

Bake at 300°F for 40 minutes total.

After 25 minutes, stir in the dried fruit, then bake for 15 minutes more.

Store in an airtight container for up to two weeks at room temperature.
