1 star anise
1 cinnamon stick
3 cups evaporated milk, divided
1/2 nutmeg, freshly grated
1/2 tonka bean, grated
1 teaspoon mixed essence (vanilla, pear, and almond)
1 teaspoon aromatic bitters
1/2 cup white rum
1/2 cup overproof rum
1 lime zest

In a large mixing bowl, combine the diced pumpkin and evaporated milk. Mix well until smooth.

Add the star anise, cinnamon stick, freshly grated nutmeg, grated tonka bean, mixed essence, aromatic bitters, white rum, and overproof rum to the mixture.

Whisk all the ingredients together until fully combined.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld.
