1/2 teaspoon salt
1/3 cup coconut oil
1/3 cup peanut butter
1 teaspoon vanilla
1/4 cup maple syrup

Preheat the oven to 300°F.

Line a cookie sheet with parchment paper and set aside.

In a mixing bowl, combine 3 cups of oats, 2 tablespoons of chia seeds, 1/2 cup of chopped nuts, and 1/2 teaspoon of salt. Stir together.

In a small saucepan over low heat, melt 1/3 cup of coconut oil, 1/3 cup of peanut butter, 1 teaspoon of vanilla, and 1/4 cup of maple syrup. Stir consistently to prevent burning.

Once melted and combined, pour the wet mixture into the dry ingredients and stir well until all oats are coated.

If desired, add any dried fruit or shredded coconut flakes at this point and stir to combine.

Spread the mixture onto the prepared cookie sheet, flattening it out into a pancake shape for even baking.

Bake in the preheated oven for 45 to 50 minutes until golden brown.

Allow the granola to cool completely on the cookie sheet before transferring it to an airtight jar for storage.
