In a bowl, whisk together 5 eggs, 1/3 cup of unsweetened almond milk, 2 teaspoons of vanilla extract, and 2 teaspoons of cinnamon until well combined.
Pour the egg mixture evenly over the biscuit pieces in the baking dish.
Bake in the preheated oven for 35 minutes.
