Combine 250 grams medium semolina, 250 grams fine semolina, 150 grams flour, 2 tablespoons ground cinnamon, and a pinch of salt in a bowl.

In a separate pan, warm 300 grams of water and 150 grams of vegetable oil along with a little orange blossom water.

Pour the warm mixture into the semolina mixture to form a dough.
