Combine 1 pound of ground beef, 1 pound of ground pork, and 0.5 pound of pork fat in a bowl.
Run the pork fat through a grinder, then mix it with the already ground pork and beef by hand.
Add 2 teaspoons of salt and 1 teaspoon of sugar to the meat mixture; mix well.
Add 0.5 teaspoon of black pepper, 0.125 teaspoon of clove, 0.125 teaspoon of nutmeg, 0.25 teaspoon of coriander seeds, and 0.375 teaspoon of dried mustard; mix thoroughly.
Let the mixture rest in the refrigerator for 30 minutes to allow flavors to mingle.
Switch to the sausage horn attachment on the grinder and prepare hog casing for stuffing.
Stuff the sausage mixture into the hog casing, coiling the sausages instead of rolling them up.
Place the coiled sausages on a smoker to develop flavor; if not smoking, add 0.5 teaspoon of liquid smoke to the mixture.
