Wash the medium grain white rice several times until the water runs clear.

Parboil the rice for about 4 to 5 minutes, then drain excess water.

Add a tablespoon of salt to the rice while boiling.

Pound about 1/4 teaspoon of saffron and add a couple tablespoons of boiling water to it, letting it sit.

Mount the rice into a dome shape in the pot and poke five holes in it, then cover and steam for 45 minutes.

Clarify butter by boiling it and skimming off the milk solids, then add chopped onions and cook until golden brown.

Add chicken pieces on top of the onions and sprinkle with saffron.

After 5 minutes, add 150 to 200 mL of water, cover, and let it stew, seasoning with salt and pepper.

Heat more ghee or butter and add barberries, stirring for a few minutes before adding sugar and cinnamon to taste.
