Pulse 1 cup of granulated sugar with the zest of 2 lemons in a food processor until well combined.

Juice the lemons and strain to measure out about 1/2 cup (100 mL) of lemon juice.

In a heavy pot, whisk together 6 egg yolks and the infused sugar mixture until light and combined.

Add the lemon juice to the egg yolk mixture and whisk until smooth.

Place the pot on low heat and stir continuously until the mixture thickens and bubbles, about 10-15 minutes.

Once thickened, remove from heat and whisk in 1/2 cup (113 grams) of cold butter cut into tablespoon-sized pieces until fully melted and incorporated.

Transfer the lemon curd to a bowl or jar to chill before use.
