Today, lemon curd is enjoyed globally, used in desserts, spreads, and even cocktails, showcasing its versatility and appeal.

Juice lemons until you have 2/3 cup of freshly squeezed lemon juice, using a strainer to catch any seeds.
In a mixing bowl, combine 2 whole eggs and 4 egg yolks with 1 cup of white granulated sugar.
Whisk the egg and sugar mixture for about 3-4 minutes until creamy, using a hand whisk or mixer.
Pour the egg and sugar mixture into a stainless steel saucepan.
Add the freshly squeezed lemon juice to the saucepan and whisk quickly.
Turn the heat to medium and cook the mixture, stirring with a rubber spatula and scraping the bottom to prevent burning, for about 3-5 minutes until thickened.
Remove the saucepan from heat and stir in 1/2 cup of unsalted butter and 1 teaspoon of vanilla extract until the butter is fully melted.
Transfer the lemon curd to a glass mixing bowl and cover the surface with plastic wrap to prevent a film from forming.
Once cooled, transfer the lemon curd to sealed glass jars for storage in the refrigerator.
