Add lemon juice, zest, and salt to the egg mixture and whisk until smooth.
Place the bowl over a pot of simmering water, creating a double boiler.
Stir the mixture continuously until it thickens, about 10-15 minutes.
Remove from heat and stir in butter until fully melted and incorporated.
Strain the curd through a fine sieve to remove any lumps or zest.
Transfer the lemon curd to a sterilized jar and let it cool.
Seal the jar and refrigerate until set, at least 2 hours before use.
