Place together juice, zest, granulated sugar, and eggs and egg yolks in a 2-quart saucepan.

Stir and cook over moderately low heat, whisking constantly until the curd is thick enough to hold marks of whisk and first bubble appears on the surface.

Remove the pan from heat and continue whisking.

Add the butter while whisking until all butter has melted.

Pour curd into a mesh strainer to ensure any thicker bits or zest stay out of the curd.

Transfer lemon curd to a bowl and chill, its surface covered with plastic wrap, until room temperature, at least 1 hour.

Transfer into a jar then into the fridge.
