3 cinnamon sticks
1 teaspoon vanilla extract
1 whole nutmeg
5 eggs
130 grams granulated sugar

heavy cream

🥗Healthier: coconut cream

💰Cheaper: whole milk

Coconut cream offers a dairy-free option while maintaining richness.

bourbon

🥗Healthier: non-alcoholic vanilla extract

💰Cheaper: spiced rum

Spiced rum can mimic flavors while being more affordable.

1

Warm 700 ml of whole milk in a saucepan until it reaches boiling point, stirring to prevent it from catching.

2

Add 240 ml of heavy cream to the saucepan with the milk.

3

Add 3 cinnamon sticks to the saucepan.

4

Add 1 teaspoon of vanilla extract to the saucepan.

5

Grate nutmeg into the saucepan, using a whole nutmeg to taste.

6

Remove the saucepan from heat and let the flavors steep.

7

Separate 5 eggs into yolks and whites, placing them in two separate containers.

8

Whisk the egg yolks with 130 grams of granulated sugar until thick ribbons form.

9

Remove the cinnamon sticks from the milk mixture.

10

Slowly pour the milk mixture into the egg yolk mixture while whisking on low speed to prevent scrambling.

11

Add 175 ml of bourbon or rum to the mixture and combine well.

12

Pour the mixture into two bottles, using a funnel for ease.

13

Let the mixture sit for a day or two to allow flavors to infuse.

14

After a couple of days, whisk half of the reserved egg whites to stiff peaks.

15

Combine the whipped egg whites into the eggnog mixture just before serving.
