Pick through the crab claw meat to remove any shells.
Roast the poblano and red bell peppers by either spraying with olive oil and roasting in the oven or charring directly on a gas burner until blackened.
Place the roasted peppers in a plastic bag to steam and make peeling easier.
Small dice the celery, slice the green onions, chives, and parsley, and add them to a bowl with the picked crab meat.
Squeeze in lemon juice, add mayonnaise, mustard, Old Bay seasoning, salt, and black pepper to the bowl.
Mix the ingredients together and let the mixture chill.
Peel the blackened skin off the roasted peppers, cut off the ends, remove the seeds, and small dice the peppers before adding them back to the crab mixture.
Chill the crab mixture completely before serving it on butter leaf lettuce and dinner rolls.
