This delightful pastry is often enjoyed during festive occasions and is a staple in Danish coffee culture. Today, it has transcended borders, becoming a beloved treat in bakeries worldwide, often filled with fruits, creams, or chocolates.

Add 480 grams of flour to a mixing bowl.
Cut 375 grams of cold butter into pieces the size of a kidney bean or smaller and add to the flour.
Lightly mix the butter into the flour.
Add 100 grams of sugar, 10 grams of salt, and 10 grams of ground cinnamon to the mixture and lightly mix again.
Make a well in the center of the mixture and pour in 150 milliliters of milk, 150 milliliters of heavy cream, and crack in 2 eggs.
Crumble in 30 grams of yeast and mix everything together to form a dough.
Flour the surface and bring the dough together, wrapping it in plastic wrap.
Chill the dough in the fridge for about 4 hours.
Make icing by mixing 100 grams of icing sugar with 50 milliliters of milk and 1.5 teaspoons of vanilla essence until smooth, then chill in the refrigerator.
Prepare cherry jam by cooking cherries with half the amount of sugar and a quarter of the amount of water until it reaches 105°C on a sugar thermometer, then jar it.
After 4 hours, remove the dough from the fridge and give it three folds without resting in between.
Wrap the dough again and chill it in the fridge for 30 minutes.
Roll the chilled dough into a long rectangle, trimming the edges to make it even.
Cut strips on the sides of the dough and spread cherry jam in the center.
Fold the strips over the jam to create a Danish shape.
Use offcuts to make mini Danish rolls with dried cranberries.
Egg wash the pastries before baking.
Bake in the oven at 200°C for 15 minutes.
Once baked, drizzle icing over the pastries.
