This method of cooking highlights the island's fresh herbs and spices, creating a flavorful centerpiece for any meal. Today, variations can be found globally, with each culture adding its unique twist, from herbs to marinades, making it a versatile favorite.

Margarine can lower saturated fat, while oil is generally less expensive.
Start by making the herb butter: in a mixing bowl, combine 1/2 cup of room temperature butter, 1 tbsp of chopped sage, 1 tbsp of chopped rosemary, some fresh thyme, salt, and a pinch of black pepper.
Mix the butter until it is very soft and well combined.
Season the inside of the chicken with salt, fresh sage, rosemary, and thyme.
Pat dry the chicken with paper towels.
Coat the chicken with the herb butter, ensuring to cover all parts.
Place any remaining butter inside the chicken cavity.
Use butcher twine to tie the legs together.
Transfer the chicken into a cast iron skillet.
Prepare the oven with a good amount of charcoal on the side to maintain temperature.
Cook the chicken in the oven for around 1 hour, avoiding a big flame to prevent burning the outside while ensuring the inside cooks properly.
After about 45 minutes, check the chicken; it should look beautiful and golden.
Close the valve on top of the oven partially to keep the heat inside.
After 10 more minutes, check the internal temperature of the chicken; it should reach 165°F.
