Preheat the oven to 375 degrees Fahrenheit.

Preheat the cast iron pan on the stovetop.

Prepare the chicken rub by grinding parsley, sage, rosemary, and thyme in a mortar and pestle.

Spatchcock the chicken by cutting out the spine with kitchen shears and then cutting it completely in half with a sharp knife.

Mix in thyme, brandy, and 1 cup of cream to create a pan sauce.

Return the chicken to the pan and insert a probe thermometer to monitor the temperature.

Roast the chicken in the oven at 375 degrees Fahrenheit until it reaches an internal temperature of 165 degrees Fahrenheit.
