Clean the chicken and soak it in vinegar and lemon for about half an hour.

Prepare two seasonings: one for the chicken and one for the tray.

Mix room temperature butter with red pepper powder, turmeric, ginger, salt, black pepper, thyme, lemon juice, tomato paste, and mashed garlic until well incorporated.

Massage the seasoned butter all over the chicken, including underneath the skin, especially in the breast area.

Place four pieces of garlic underneath the skin of the chicken, and add half a lemon and two bay leaves inside the cavity.

Tie the chicken well and place it breast side down in the tray.

In the tray, add tomatoes, onions, bay leaves, thyme, garlic, and 1 cup of water to avoid burning the chicken.

Cover the chicken with aluminum foil and poke holes in it to allow steam to escape.

Cook the chicken for about 1 hour at 400°F (204°C).

After 1 hour, check the chicken and turn it over.

Poke the chicken breast with a knife to check if it's well cooked.

Add mushrooms to the sauce and cover the chicken again, cooking for another 45 minutes.

After 45 minutes, remove the aluminum foil and grill the chicken in the oven for about 45 minutes.
