Irish Stout Brown Bread

Irish stout brown bread has its roots in the rustic baking traditions of Ireland, where hearty breads were a staple in every household. The use of stout not only adds depth of flavor but also reflects the country's rich brewing heritage. This bread is often enjoyed alongside stews or soups, making it a comforting addition to any meal. In modern times, variations have emerged, with some bakers incorporating seeds and nuts for added texture and nutrition.

Non-alcoholic stout maintains flavor without alcohol.
Combine 2 cups of whole wheat flour and 1 and 1/2 cups of bread flour in a large bowl.
Add 2 tablespoons of unsweetened cocoa powder to the flour and mix well.
On one side of the mixture, add 1 tablespoon of salt, and on the opposite side, add 2 teaspoons of sugar.
Sprinkle 1 package of active dry yeast on the side with the sugar.
Pour in 1/4 cup of molasses and 2 teaspoons of coffee into the mixture.
Gradually add 1 and 1/4 to 1 and 1/2 cups of hot water until everything comes together.
Add 2 tablespoons of unsalted butter to the mixture and mix until the dough is tender and moist.
In a separate bowl, add 1 tablespoon of cooking oil and transfer the dough into this oiled bowl, coating the exterior with oil.
Loosely cover the bowl with cling film and let it proof in a warm place until it doubles in size.
Once doubled, punch down the dough and scrape it from the sides of the bowl.
Lightly dust the work surface with flour and knead the dough for about 10 minutes until smooth.
Shape the dough into a log and place it in a lined 9x5 bread pan.
Let the dough proof again until it doubles in size in the pan.
Preheat the oven to 375°F.
Brush the top of the loaf with 2 tablespoons of heavy whipping cream and sprinkle quick oats on top.
Bake the loaf for 25 to 30 minutes until done, checking that it is cooked through in the center.
Remove the loaf from the pan using the parchment paper flaps and let it cool completely.
Prepare honey cinnamon butter by whisking 1 stick of softened butter until smooth.
Add cinnamon and a pinch of salt to taste, then mix in 2 to 3 tablespoons of honey.
Slice the cooled bread and serve with the honey cinnamon butter.
