1 Scotch bonnet pepper
1.5 tbsp allspice
1 tbsp vinegar
2 tbsp all-purpose seasoning
1-2 tsp paprika
2 tsp black pepper
1 tsp sugar

Wash the pork belly in lemon juice.

Poke the pork with a knife to allow seasoning to soak in.

Add wet jerk seasoning to the pork and massage it in.

Add 2 tsp of jerk powder seasoning to the pork.

Let the pork marinate for at least an hour or overnight.

Preheat the oven to 180° to 200° C (400° F).

Spray oil in a baking pan and add scallions and thyme.

Place the marinated pork in the baking pan.

Add a little water to the side of the pork.

Cover the pan with foil and bake for about 2 hours.

After an hour, remove the foil to check the pork.

Pour the liquid from the bottom over the pork and return it to the oven without foil for 10-15 minutes.

Remove the pork from the oven and let it rest before slicing.
