Wash and clean the pork using vinegar.

Add a small amount of water to the blender jar.

Add scallions, garlic, onion, thyme, pimento berry, and dry thyme into the blender.

Blend until smooth to create the marinade sauce.

Add 4 lbs of pork to a bowl and sprinkle with 2 tablespoons of mid seasoning, 1 tablespoon of all-purpose seasoning, 1 tablespoon of orange spice, and 1 tablespoon of seasoned salt.

Add 1 tablespoon of browning for color.

Massage the dry rub into the pork pieces until well coated.

Place the pork pieces into a Ziploc bag and pour the marinade sauce over them.

Seal the bag and rub the marinade into the pork.

After 45 minutes, remove the aluminum foil and turn the pork pieces over.

Let the pork cook for an additional 10 minutes without the foil.

Use leftover marinade sauce to coat the pork pieces every 5 minutes for the remaining cooking time.

After 20 minutes, check on the pork and coat again with sauce.

After the final 15 minutes, remove the baking tray from the oven and prepare for tasting.
