Wash the pork again to remove the vinegar, then strain off the water.
Chop onion into nice chunks and add to the blender.
Add green onion and fresh thyme to the blender.
Add 2 cups of water to the blender.
Add pimento (allspice) to the blender, judging the quantity as needed.
Add 4 cloves of garlic to the blender.
Add 1 tablespoon of jerk seasoning to the blender.
Add 1 tablespoon of Jamaican jerk seasoning to the blender.
Add 1 tablespoon of seasoned salt to the blender.
Add 1 tablespoon of meat seasoning to the blender.
Add 1 tablespoon of onion powder to the blender.
Add 1 tablespoon of roasted garlic to the blender.
Add 1 tablespoon of browning sauce to the blender.
Blend the mixture on medium until smooth to create the marinade.
Prepare the dry rub by adding smaller quantities of the same seasonings: 1 teaspoon each of pimento, jerk seasoning, roasted garlic, Jamaican jerk seasoning, onion powder, seasoned salt, and meat seasoning.
Rub the dry rub into the pork to ensure it is well coated.
Add more browning sauce to the pork to achieve the desired color.
Pour the blended marinade over the pork and massage it in thoroughly.
Cover the pork and refrigerate it overnight for best flavor.
Prepare the charcoal barbecue for cooking the pork.
Place the marinated pork on the barbecue and close the lid.
Check the pork periodically, flipping it to ensure even cooking.
After about 20 minutes, check the pork for tenderness and color.
Prepare a dipping sauce by boiling it to avoid contamination with the cooked pork.
Dip the cooked pork in the sauce one piece at a time to keep it moist and flavorful.
Continue to cook the pork, checking for doneness and color.
After cooking, serve the pork.
