Combine scallions, garlic, ginger, thyme, allspice, nutmeg, cinnamon, brown sugar, soy sauce, lime juice, habanero peppers, black pepper, and salt in a blender.

Blend until smooth to create the jerk marinade.

Place pork shoulder in a large bowl or resealable bag.

Pour the jerk marinade over the pork, ensuring it is well coated.

Seal the bag or cover the bowl, and refrigerate for at least 4 hours or overnight for best flavor.

Preheat the grill to medium-high heat.

Remove the pork from the marinade, allowing excess to drip off.

Lightly oil the grill grates to prevent sticking.

Place the pork on the grill and cook for about 20-25 minutes per side, or until the internal temperature reaches 145°F.

Remove from the grill and let rest for 10 minutes before slicing.
