1

Welcome to Chef Henry's kitchen, where I'll show you how to make the best Jamaican jerk pork.

2

Gather all your ingredients: pork shoulder, pimento leaves, scallions (green onions), ginger, garlic, browning sauce, and various seasonings.

3

Wash the pork shoulder using vinegar and water, rubbing it thoroughly to clean.

4

Drain the pork and rinse it under running water, keeping the bowl slanted to catch the water.

5

Cut the pimento leaves and add them to the blender along with the garlic, ginger, and onions to make the marinade.

6

Add 1 cup of water to the blender with the other ingredients and blend until smooth.

7

Apply the dry rub seasonings to the pork, massaging it into the meat evenly.

8

Place the seasoned pork into a resealable bag and pour the marinade over it, ensuring all pieces are coated.

9

Seal the bag and refrigerate the pork to marinate for a few days for best flavor.

10

Prepare the grill by lighting charcoal and setting a cast iron pan with pimento leaves on top to create smoke.

11

Parboil the marinated pork in a pot with 1 cup of water for 15 minutes, turning occasionally.

12

After parboiling, transfer the pork to the grill and arrange it evenly on the grates.

13

Grill the pork for about 15 minutes, turning frequently to ensure even cooking and to develop a nice color.

14

Dip the pork pieces into the sauce to add moisture and flavor, continuing to grill until fully cooked.
