Chicken is leaner and pork is often more affordable.

Grape juice maintains flavor without alcohol, while white wine is often less expensive.
Cut brisket into thin layers using a sharp knife.
Spread German mustard over the brisket.
Add pickled cucumbers inside the brisket layers.
Use a wooden spit to hold the rolled brisket together.
Wrap the beef in foil and cool it overnight.
Preheat the smoker to about 270-300°F.
Place the wrapped beef in the smoker to get some smoke.
In a casserole, add a quarter of water and sliced onion rings.
Add beef stock and spices to the casserole.
After about 30 minutes, when the meat gets a nice color, transfer everything to the casserole.
If desired, add red wine and let it simmer for about 90 minutes, turning the rolls occasionally.
