Pork tenderloin is leaner, while pork butt is often cheaper.
Season the pork butt or pork shoulder on all sides with salt, black pepper, oregano, cumin, chili powder, garlic powder, and onion powder.
Heat olive oil in a pan over medium-high heat until hot and smoky.
Sear the pork in the hot oil for about 2-3 minutes on all sides until browned.
Transfer the seared pork into the slow cooker.
Cut up carrots and baby potatoes, then add them to the pan with a little salt and black pepper.
Sauté the carrots and potatoes on medium-high heat for about 5 minutes until they caramelize slightly.
Melt butter in the same pan, then add minced onion and sauté for about 2 minutes.
Add minced garlic to the pan and sauté for 30 seconds until fragrant.
Stir in all-purpose flour and cook for 1 minute.
Pour in apple juice and whisk until the sauce thickens.
Add sweet chili sauce, Worcestershire sauce, and chicken bouillon cubes to the sauce and mix well.
Allow the sauce to simmer for about 1 minute to combine flavors.
Pour the sauce over the meat and vegetables in the slow cooker and shake to distribute the sauce.
Add sprigs of fresh rosemary and thyme on top of the mixture.
Cover the slow cooker and let it cook on low for 8 hours.
After 8 hours, discard the herbs and skim off excess oil before serving.
