Heat milk in a stainless steel pan on the stove to 180°F (82°C).

Allow the milk to cool to 110°F (43°C).

Open the packet of direct-set yogurt starter culture and measure out 1/8 teaspoon.

Add the starter culture to the cooled milk.

Stir the milk and starter culture mixture until evenly distributed, but not fully incorporated.

Pour the mixture into individual jars of a yogurt maker or another container that can maintain 110°F (43°C).

Cover the jars and set the yogurt maker for 5 to 8 hours, depending on desired thickness.

After 7 hours, check the yogurt; it should be solid and not runny when tipped.

Let the yogurt cool for a few minutes, then refrigerate for a few hours before serving.
