Pour milk into the Instant Pot.

Press the yogurt button to heat the milk.

Heat the milk to 185°F and hold it at that temperature for 1 hour.

Turn off the Instant Pot and open the lid to cool the milk.

Cool the milk down to room temperature, either with the lid on or by placing the pot in an ice bath.

Once cooled, take a spoonful of last times yogurt and mix it with a splash of fresh milk until smooth.

Pour the yogurt mixture into the main batch of milk and stir well.

Put the mixture back into the Instant Pot and press the yogurt button to hold it at 80°F for 8 hours.

After 8 hours, the yogurt is ready. Cool it in the fridge for a couple of hours before serving.

For thicker yogurt, strain it using cheesecloth if desired.
