Roughly chop 3 cloves of garlic.
Wash and chop broccoli into bite-sized pieces.
Prepare a handful of roasted cashew nuts.
Slice 1 chicken breast into thin pieces.
Grate a bit of ginger.
Marinate the chicken with light soy sauce, oyster sauce, a pinch of baking soda, maple syrup, and white pepper powder. Mix evenly.
Add corn starch and water to the marinade and stir until mixed. Add a splash of cooking oil at the end.
Warm up a non-stick pan on medium-high heat and add cooking oil.
Toss in the broccoli and sprinkle a little salt over it. Pour in some water and cover with a lid to cook for 1 minute.
After 1 minute, take the broccoli out of the pan.
Keep the flame on medium-high and add a little more oil to the pan.
Pour in the marinated chicken and spread it out. Let it sit and sizzle until it starts to turn golden brown.
Add the chopped garlic to the chicken and stir-fry.
Pour in cooking wine and stir until it evaporates.
Add dark soy sauce and stir until the chicken is coated in color.
Pour in a bit of water and let the sauce thicken due to the corn starch.
Add the cooked broccoli and roasted cashews to the pan and mix everything together.
Turn off the heat and serve.
