Preheat the oven to 400°F (200°C).

Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into 4 squares.

In a bowl, mix the sliced apples, sugar, cinnamon, and lemon juice until well combined.

Place a spoonful of the apple mixture in the center of each pastry square.
